Snow Cone Syrup
1 cup water
2 cup sugar
1 .22 ounce unsweetened powdered drink mix
Mix all ingredients in a saucepan. Stir over medium heat to dissolve sugar. Bring to a boil and then immediately remove from heat. Don't allow mixture to boil for longer than a minute or your syrup will be too thick. Allow to cool. Pour into bottle.

Lemonade
8 lemons, juiced
8 cups water
1 cup white sugar
In a 2 quart pitcher, combine the lemon juice, water and sugar. Stir until sugar is dissolved. Chill in refrigerator.

Cilantro-Lime Rice
2 cups water
1 tablespoon butter
1 cup long-grain white rice
1 teaspoon lime zest
2 tablespoons fresh lime juice
1/2 cup chopped cilantro
Step 1: Bring the water to a boil; stir the butter and rice into the water. Cover, reduce the heat to low, and simmer until the rice is tender, or about 20 minutes.
Step 2: Stir the lime zest, lime juice, and cilantro into the cooked rice just before serving.
Enjoy!

1 cup black beans, drained
1 cup white sweet corn, drained
2-3 avacodos
1/2 cup chopped red onion
1/2 cup chopped cilantro
2 Tablespoon lime juice
2 Tablespoon olive oil
1 Tablespoon red wine vinegar
2 teaspoon salt
1/2 teaspoon pepper
Peel, seed and chop the avacodos into cubes. Chop cilantro. Mix all ingredients together thoroughly. Chill for 30 minutes. Serve and enjoy!
